Tantalize your taste buds with a bowl of this tasty gumbo filled with chicken, pork, shrimp and spicy Cajun flavor!
Hot Diggity Dog! THIS IS AWESOME! If your in the mood for some foot stomping, "toe-curling" gumbo - this is the recipe to try! Even if you've never had gumbo before - this would be a great recipe to convert you! Per others, I reduced the broth to 5 cups, increased the chicken and used "smoked cajun sausage" (and more of it). Also, I drained a can of tomatoes instead of chopping the roma's and used a green bell pepper instead of the red chile peppers. Thick, hearty, spicy (but not hot) and great over rice. Makes a ton but it we can't wait for the leftovers! Thanks so much Jason and Lupe! This recipe deserves nothing less than five stars!!!
I used 2 lbs boneless chicken thighs, 1 lb kielbasa type sausage and 1 lb of pork sausage links that were tomato garlic flavored. I did not like the texture of the latter sausages in my gumbo. I also added 2 lbs frozen okra. Flavor on first night tasted too much like the beer I added. I'm not a fan of beer. However, the next day, after the flavors melded. Holy cow! This was awesome! Today my dh took for lunch and he was full of compliments about the flavor. I will make again. Next time with the meat as indicated.
The flavor was excellent. It had a good amount of spice without any burning sensation. I only put 1 quart of chicken broth in, as I didn't have enough room for more. I used all home grown tomatoes, 2 red hot chili peppers, and 2 green peppers.
I am generally pretty versatile while I cook, so I had to give this a shot. My partner is from Louisiana and loves gumbo. I saw this and thought "she'll most definitely love it." It was a hit with her. One bite of it, and she instantly fell in love. The flavors all balance each other out and are most definitely a taste of the south. Most excellent!!!
